- Place the diced bacon in a cold saucepan and turn on heat. Fry for a few minutes and place on kitchen paper to drain.
- Fry the onion and garlic in butter until soft. Add the chopped pepper and potato, and fry for a few more minutes. Add the milk and fish stock, and simmer until the potatoes are done.
- Cut the fish into pieces of 3-4 cm, and add to the pot. Season with salt and pepper.
- Simmer approx. 5 minutes or until the fish is firm. Add the diced bacon and sweetcorn.
- Sprinkle with parsley before serving.
