Hot ‘n Spicy Norwegian Coalfish Casserole

  • Place the diced bacon in a cold saucepan and turn on heat. Fry for a few minutes and place on kitchen paper to drain.
  • Fry the onion and garlic in butter until soft. Add the chopped pepper and potato, and fry for a few more minutes. Add the milk and fish stock, and simmer until the potatoes are done.
  • Cut the fish into pieces of 3-4 cm, and add to the pot. Season with salt and pepper.
  • Simmer approx. 5 minutes or until the fish is firm. Add the diced bacon and sweetcorn.
  • Sprinkle with parsley before serving.

800   g coalfish fillet, boned and skinned
100   g diced bacon
1 tbsp   butter
1   onion, finely chopped
2   cloves garlic, finely chopped
1   Spanish pepper, finely chopped
4   potatoes, sliced
3 dl   milk
4   dl fish stock
200   g tinned sweetcorn
1 tbsp   chopped parsley
1/2 tsp   salt
1 ml   ground white pepper
